Virgin Raspberry Mint Mojito’s

Here in Texas where the weather is always pretty nice, we like to drink virgin raspberry mint mojitos all year round. This is the perfect, refreshing summer-time drink to cool down after a hot afternoon, or to drink with the whole family while grilling meals outside. It looks as great as it tastes, so it is perfect to serve at any party or event and because there is no alcohol, kids love it too.

I purchased most of the ingredients to make these at Central Market and HEB. I like to use Topo Chico instead of regular soda water, but you can use whatever soda water you like best.

The tools I used to make these drinks were all purchased at Target. Follow the links below if you want to buy your own.

Ingredients:

  • Mint Leaves, about 10 or so per Mojito ( washed )
  • Lime Wedges, I like to use about 2.5 limes per drink
  • Raspberries ( about 5 or 6 per glass )
  • Agave Syrup, about 1 tsp or so, to taste ( I use light, but the dark is probably fine )
  • Ice Cubes
  • Topo Chico, to fill the glass

How To:

First step, muddle a about 10 mint leaves, a lime wedge or two, and about 5 raspberries with your agave in the bottom of a tall glass. You want to break up the mint, lime and berries to get the flavors to meld with the agave. To do this, the muddler has little plastic teeth that easily muddles all the ingredients together, and is long enough to get to the bottom of a longer glass.

Final step, fill your glass with ice and top off with Topo Chico or soda water. Garnish with a lime slice, fresh mint and a raspberry and drink with a straw.
