Summer recipes: Spring Rolls

It’s so hot here I’m always looking for fresh easy recipes that keep me out of the kitchen and are cold and refreshing! This is one of my go to’s because it’s so easy and perfect for lunch the next day, and you can honestly use whatever fresh lettuce and vegetables you have in your fridge! 

Recipe:

1 cup peanuts

1 bag shredded carrots

1 bunch cilantro

1 cucumber diced

1/2 red cabbage chopped

1/2 bunch radishes, chopped

2 handfuls carrots

1/2 bunch green onions, chopped

Other veggies I use if I have: green cabbage, celery, peppers or any other crunchy veggie

1 container spring roll skins

Fill a pie container with hot water. Place one spring roll skin in the bottom until soft. Once soft put on place and spoon 2 spoonsfuls of salad mix in the middle. Roll like a burrito and fold both ends in.  

I just use whatever veggies I have on hand so my recipe will vary. I love this as a salad too! It’s so pretty!

Serve with sweet chili sauce (see photo) or spicy peanut sauce (recipe coming).
