Summer recipes: Ceviche

If there is one recipe we can’t live without it’s this.  My nanny made this for us years ago and it’s a monthly favorite.  It’s fresh, light and perfect for a hot summer night, it’s easy to make, can be made the night before and even my kids love it! 

1 pound tilapia (this would be great with shrimp or lots of other fish too)

2 tomatoes, diced

1 bunch cilantro, chopped

1/2 onion, diced

1 jalapeno, diced (to taste, I prefer more, my children prefer less)

1 bag key limes 

1 teaspoon soy sauce

Hot sauce, to taste

Salt and Pepper, to taste

Dice fish and place in bowl.  Juice key limes (could also be done with regular limes but the key limes have more flavor). Use enough limes to cover the fish, we used approximately 25.  Leave fish in fridge for at least 4 hours, better if overnight. This essentially cooks the fish! Drain fish, mix with remaining ingredients and serve!
