Summer grillin’: Salmon Kabobs
This is hands down one of our families favorite recipes. In the summer we make it almost once a week! My kids love it and I can order the fish and our side dish from Costco so it’s super easy. We actually make this so much I made a huge batch of the seasoning and just leave it ready for the next time. I’m not a fancy cook and like it easy. I always look for recipes that I think I can make, try them out, add a little twist and make them more simple! I know sometimes kids are afraid of fish but I actually think if you prepare it right they might like it better than other chicken.
Salmon Kabobs
1 T sesame seeds
2 T dried Italian seasoning
1 T oregano
1 T ground cumin
1 tsp crushed red pepper flakes
1 T kosher salt
Pepper to taste
5 lemons, sliced
1 pound of salmon ( I always get the fresh farmed atlantic salmon from Costco), cubed
Lemon Pepper
Wood skewers
Alternating salmon and folded lemon slice load wood skewers. Sprinkle with the first 5 ingredients mixed. Spray grill with Pam. Grill for approximately 8 minutes or until just cooked through. Serve with lemon pepper to taste. I usually serve with quinoa and wild rice that you can buy in little packets at Costco and warm up for 90 seconds.
