Nordstrom Salad Copycat

I have been a Nordstrom snob for as long as I can remember.  I think my mom honestly only shopped at Nordstrom for the first 10 years of my life…seriously.  When I was a little older we went to Nordstrom every couple of months (it was about an hour and half away) and then eat dinner in the Nordstrom Cafe before going home.  Our favorite was their Cilantro Lime Shrimp Salad.  So I’ve tried to make it and this is as close as I could get. And it’s beautiful and the dressing is amazing!! Perfect for a hot summer night.

Salad:

3 cups spinach, mixed greens or chopped romaine (I prefer Spinach)

1 cup chopped red cabbage

1 can corn, drained

1 red pepper and canned roasted red pepper, chopped

4 green onions, chopped

1/4 cup pumpkin seeds

1/4 cup monterey jack cheese, shredded (I usually omit this)

Tortilla Strips, optional

Grilled shrimp or chicken, I usually don’t make it with this just because the dressing is so good and it honestly doesn’t need it!

Dressing:

1/2 c fresh lime juice

1/2 rice wine vinegar

1 clove garlic

2 T honey

1 tsp kosher salt

1/2 cup canola oil

1/2 bunch cilantro

I just throw this all in the blender to mix until it’s well mixed!

Best dressing ever!
